Veggie?

LOVE this zucchini bread recipe I got from the back of Bob's Red Mill gluten free all purpose baking flour. It packs 2 cups of shredded zucchini so it's definitely substantial enough to be counted as a vegetable, right??? I made two loaves - one for us (which is almost gone and I just made it this evening) and the other is for tomorrow. We're going to a friend's to hang out. I'll be curious to see what they think with it being gluten free and all. Will they be able to tell? Hmmm, we shall see.Veggie?
